What I love about chia seeds is the fact that they make an awesome breakfast. Besides that, they are extremely healthy and nutricious. Like everyone else, I was struggling with my new year's resolutions (e.g. eat healthier, shop less, you know the deal). A friend of mine introduced me to these lovely seeds, and I was instantly hooked. The idea is simple and all you need is:
- Chia seeds
- Almond milk
- some fruit of choice (pomegranate, mango, blueberries)
Its easypeasy. Mix about 2 tbs of chia seeds with about 1 big glass of (unsweetened) almond milk. I always use a bottle and then leave it for about 15 minutes. You can already see the seeds expand at this point. Afterwards, put the mix in a bowl and leave it to rest for a night in the fridge. The next morning you'll have a strange looking pudding that tastes delicious and really fills you up! Feel free to pimp your pudding with some cinnamon, coconut milk, or agave syrup.
Bon Appétit!
